This kitchen looks clean and well organised to me ... and I've seen some really cruddy restaurant/cafe kitchens in my time, in the UK, Europe and the US.

It's a little disturbing that I always see food left lying out in the open even when they appear closed.  Right now most lights are off but there is a pan of cooked meat sitting out in the open.  Uncovered.  If there are any rodents or bugs in the place, they could easily crawl over the food. Ugh.  I guess this is why I don't want to see behind the scenes in my favorite restaurants!!

All restaurants in the USA have mats in the kitchen. They prevent slipping on the floor.

They could trip. Also, I'd like to see them mop the floor, see if they move it AND mop it. It would not be allowed in the UK. :))
