I'm a butternut squash fan, so simple to cook. Mind you..... I tend to roast or bake as much as I can, keeps the nutrients in rather than letting them cook out into the water.

Mira Bilis that sounds very nice. I love potato salad. I've never tried it with squash but I have added carrot and a smidge of celery. Obviously onion just has to be in the mix.

The Nelly's weather inspired me to make a big batch of potato salad with added squash, carrots and onions. Any excuse to make winter comfort food. ;)
Carol it does look like an occasional snowflake but I check the temps for here and it's suppose to be 61° right now. It might be cold enough in the upper air that a few snowflakes are being formed ?
