I can only think it's because of the meat/fat content. I'm sure that eating it once in a while is no worse than eating wings .... and probably less fat. It certainly won't put me off eating it. After your comment I looked at lots of links and saw quite a few saying the same ab...

WOW...this was included with a recipe for Choucroute...Disclaimer: This is not a dish for the faint of heart. If you have heart problems, eating a heaping bowl of Choucroute Garnie will probably make them worse.

I'd be picking at that fudge all day long. :D Cabbage, bacon and sausage will be lovely. Sometimes there were potatoes in our choucroute and sometimes not. I suppose it depended on if they had any knocking about. LOL!
